September's Special Recipe!
Tuna Salad and Tomatoes
2 to 3 servings
~ 1 can (6 ounces) tuna, low sodium, canned in water, drained
~ 1/4 cup mayonnaise, low-fat or light
~ 1/4 cup chopped celery
~ 1/4 cup chopped sweet onion
~ 2 to three tomatoes, cut vertically in wedges
~ Lettuce or larger basil leaves for garnish
1. Mix ingredients together.
2. Arrange tomato wedges in a spiral pattern atop lettuce or basil leaves. Top with tuna mixture.
Cook's Notes
1. Salmon may be substituted for tuna in this recipe. Canned salmon is available in water pack varieties and may be found canned without the skin, if desired.
2. The celery adds flavor as well as crunch to the tuna salad. The "crunch" factor contributes to the overall appeal of this recipe.
